Cajun Scalloped Potatoes

Check out our take on a classic dish! Thinly sliced potatoes layered, topped with cheese, and baked in a creamy Cajun sauce! For an added cheesy bonus, mix in your favorite cheeses between each layer!

Cajun Scalloped Potatoes

How To Do Dat

1. Pre-heat oven to 375


2. Combine 3 cups of heavy cream, 2 tsp of salt, 2 tsp chicken bouillon (optional), 2 tsp black pepper, 1 tsp thyme, 2 tsp Chef Bre’s Cajun seasoning, and 1 Tbsp of butter ina saucepan on a med-low heat.  Bring to low boil, then remove from heat and set aside.


3. Coat the bottom of your baking dish with 1 Tbsp of melted butter (or 1 Tbsp of duck fat).


4. Arrange potato slices on the bottom of your pan. Sprinkle the first layer of your potatoes with 1 tsp salt, 1 tsp black pepper, 1 tsp Cajun seasoning, ¼ of your sliced onions, ¼ of your minced garlic, 2 Tbsp of butter, and 2 Tbsp flour. 


5. Repeat step 4,  3-4 more times  depending on the size of your dish.


6. Top final layer with remaining onions, 2 Tbsp of flour, heavy cream mixture, your cheeses and fresh parsley.


7. Bake in preheated oven for 45-60 minutes or  until potatoes are tender. To brown top of potatoes, turn oven broiler setting on high,  and bake for an additional 2-3 minutes or until top is golden.

What You Need

3 pounds of potatoes thinly sliced 1/4-1/8 inch (any potato type will work fine, but I prefer Russet or Yukon gold) 


*TIP* after slicing potatoes put into a bowl with water and 1 tsp of vinegar to keep potatoes from browning.


½ onion thinly sliced

4-6 cloves of garlic, minced

8 Tbsp of flour

2 tsp chicken bouillon (optional)

1 Tbsp duck fat (optional)

8 Tbsp butter

5-6 tsp salt

5-6 tsp Chef Bre’s Cajun seasoning

5-6 tsp black pepper

3-4 tsp thyme

3 cups heavy cream

½ cup mozzarella

½ cup cheddar

½ cup parmesan

Parsley for garnish
